Sweden in an RV

First off, I have to apologize if this blog is lame...I'm exhausted! I've been up at 4 am every morning all week. I have to take Bob to meet his shuttle van by 6 am and I'm the type of person who, once I'm up, I'm up.
Tonight was our Swedish dinner: Swedish Meatballs II, Hasselback Potatoes, Pickled Fresh Cucumbers and Swedish Cream with Summer Berries.
I took this picture of Puppa and shared it with you all because he is just ridiculous. You don't think he's content, do you??? Crazy dog!
Sweden is a Nordic country on the Scandinavian Peninsula in northern Europe. It has land borders with Norway and Finland and maritime borders with Denmark, Germany, Poland, Estonia, Latvia, Lithuania, and Russia. It's connected with Denmark by a tunnel-bridge across the Oresund.

I started out this morning making the Pickled Fresh Cucumbers http://www.recipezaar.com/recipe/pickled-fresh-cucumbers-389623 It said to not peel the cucumbers but they were so waxy, there was no way I was going to let Bob eat the peel of them...yuck! I salted them and weighted them down with a big can of tomatoes...


and here is the finished product! These are fantastic!




This is the Swedish Meatballs II recipe http://allrecipes.com/recipe/swedish-meatballs-II/detail.aspx We really liked the meatballs but the gravy...not so much! I'll make these again minus that sauce. But don't let that stop you from trying these, it was strictly our tastes! I served this over buttered egg noodles.



Hasselback Potatoes http://allrecipes.com/recipe/hasselback-potatoes/detail.aspx These are pretty good, mine never did fan out, but they tasted really good and, in my book, that's what matters! Word to the wise...use a pastry brush to periodically brush these with butter while they are in the oven. That way, the butter gets down into all the slices. I think the next time (yes, there will be a next time) I'll put the cheese on at the very end...it got rather hard and crunchy.

Sweden is the 55th largest country in the world and the 5th largest in Europe. About 15% of Sweden is north of the Arctic Circle. It has forests that cover roughly 65% of it's land and the capitol is Stockholm.






Swedish Cream with Summer Berries http://allrecipes.com/recipe/swedish-cream-with-summer-berries/detail.aspx This was delicious! The only change I made was to cut the recipe in half! This is a dessert I'll definately be making again!! Super yummy!







And not so bad to look at, either!


My groceries ran $12.65 this week, which left $7.35 to go into the Beach Bag. The total after 16 weeks is $108.94.
This week, Bob drew Lady Sparkle, who picked Peru and Wyattdogster, who picked Japan. 42 people voted and 24-18, next week we're off to Japan. I can't wait for this country...I have an advantage in my Aunt Aiko...she's Japanese!
